Hazelnut Aebleskivers by GH Family

HAZELNUT AEBLESKIVERS
Total preparation and cooking time is typically one hour.

INGREDIENTS:

  • 2 cups pastry flour
  • 2 cups buttermilk
  • 4 large eggs, separated
  • 2 tablespoons coffee liqueur
  • 1/2 cup hazelnut meal
  • 1 teaspoon baking soda
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

 

PREPARATION:

  1. Separate the eggs. Beat egg whites until peaks form.
  2. In a separate bowl, mix egg yolks, buttermilk, coffee liqueur and sugar together. Add baking soda, salt, cinnamon, flour and hazelnut meal. Mix well.
  3. Gently fold the egg whites into the mix.
  4. Use an aebleskiver pan on medium heat.
  5. Add a small amount of oil or butter to each depression (typically 1/5 of the depression is filled with oil).
  6. Using a small ladle, place the mixture in each depression until the depression is 3/4 full.
  7. Cook until small bubbles begin to form.
  8. Slowly do quarter turns with a stainless steel skewer (or knitting needle) until the entire aebleskiver is round and brown.
  9. Remove aebleskivers to a plate or shallow baking dish lined with a paper towel.

 

SERVING SUGGESTIONS: Pick one, or create your own!

  1. Sprinkle with powdered sugar.
  2. Serve with a jelly or jam of your choice.
  3. Serve with whipped cream.
  4. Drizzle with a chocolate glaze.
  5. Serve with honey.
